GUJRATI POTATO CURRY

Ingredients: 4 medium sized potatoes (boiled, peeled and cut into cubes)

 1 smashed potato (boiled, peeled and smashed to tenderness) 

1 tsp mustard seeds (rai)

 2 tbsp dhania powder 

1 tsp turmeric powder

1 tbsp mirchi (chilly) powder 

2 medium sized tomatoes 

1 tbsp tomato puree 

salt to taste

 oil 

Heat oil in a pan and add mustard seeds, tomatoes, dhania powder, turmeric powder, mirchi (chilly) powder, salt and mix. When this paste is cooked, add the smashed potato to it and stir till it blends in with the masala. Once cooked, add the boiled potatoes and tomato puree and mix. Add a little water for gravy. Serve with hot rotis /chappatis
